3 Healing Iced Teas

Try a delicious, nutritious, and healing iced teas this summer.  Enjoy!

Acai Berry Blast
The acai berry in this tea makes it high in antioxidants.  Antioxidants help protect your body against the effects of aging (yes, wrinkling!) and disease.  The fresh lemon juice gives your body a boost of more than 20 anti-cancer phytonutrients.  I’ll be discussing anti-cancer phytonutrients in an upcoming post.

4 acai berry tea bags (I used Stash Acai Berry Herbal Tea for this recipe)
20 drops of liquid stevia (stevia is an herb that is naturally sweet.  It is the only sweetener that doesn’t raise blood sugar levels)
4-1/2 to 5 cups water, boiled
Juice of 1 lemon
Ice

In a Pyrex container add the acai berry tea bags (with the paper tags removed).  Allow to steep for 5 to 10 minutes.  Add the stevia and boiled water.  Fill two large glasses (or 4 small ones) with ice and lemon juice.
Serves 2 to 4


Iced Chai
The almond milk is an excellent source of calcium and magnesium.  The tea and spices have antibacterial and antioxidant properties.  Cinnamon helps regulate blood sugar.

½ cup liquid chai concentrate (I used Tazo Organic Chai Concentrate for this recipe)
1 cup almond milk
Dash freshly-ground nutmeg
4 medium ice cubes
Dash of cinnamon

Mix all ingredients except the cinnamon in a shaker or glass.  Pour into 1 large glass or 2 small glasses to serve and sprinkle with cinnamon.

Serves 1 to 2

Sugar-Free Green Tea Lemonade
There are many great healing properties of green tea, ranging from burning belly fat to warding off cancer.  Read 9 Reasons to Drink Green Tea here.  Fresh lemon juice contains over 20 anti-cancer phytonutrients (more in an upcoming post).

1/4 teaspoon of matcha (green tea powder)
Juice of 1 lemon
6 drops of liquid stevia (stevia is an herb that is naturally sweet.  It is the only sweetener that doesn’t raise blood sugar levels)
2 cups water
Ice

Blend all ingredients except ice in a blender.  Add the ice to 1 or 2 glasses.  Pour green tea lemonade mixture over ice and serve.

Serves 1 to 2

Moo! 5 Reasons To Skip Milk

There do not appear to be any other benefits of dairy (apart from being the source of whey protein) and to make matters worse, dairy seems to have detrimental effects to your health. Milk should be for calves (baby cows), most humans have a problem digesting it. I cannot tell you how many patients I have seen over the years whose chronic constipation, irritable bowel syndrome, arthritis, chronic sinusitis and allergies cleared up when they stopped eating dairy. When people come to see me in my practice and I put them on a diet, I almost always remove dairy.

1. Dairy cows are fed the wrong food, which not only changes the nature of the milk but causes health problems for the cows. They are fed soy, corn, cottonseed meal or other commercial feeds, which contain all sorts of things including chicken manure and citrus peel cake, laced with pesticides. These foods are not appropriate for cows, who are ruminants and should be feeding on green grass in the spring, summer and fall and on green feed, silage, hay and root vegetables in the winter. Unfortunately most dairy cows are kept in confinement, given antibiotics and hormones, and never see green grass their entire lives.

2. The milk is pasteurized. Pasteurization is the process of heating a liquid to a high enough temperature to kill certain bacteria and disable certain enzymes. It destroys enzymes, vitamins, denatures fragile milk proteins, kills beneficial bacteria and promotes pathogens. Even calves fed pasteurized milk do poorly and many die before maturity. Pasteurization was instituted in the 1920s to combat TB, infant diarrhea, undulant fever and other diseases caused by poor animal nutrition and dirty production methods. But times have changed and modern stainless steel tanks, milking machines, refrigerated trucks and inspection methods make pasteurization absolutely unnecessary for public protection.

3. In some cases, milk is ultra-pasteurized to get rid of heat-resistant bacteria and give it a longer shelf life. Ultra high temperature pasteurization is a process that takes milk from a chilled temperature to above the boiling point in less than two seconds. This process is utilized for the boxed milks that can be kept at room temperature

4. To make matters worse, milk is homogenized. Homogenization is a process that breaks down butterfat globules so they do not rise to the top. Homogenized milk is harder to digest, so proteins that would normally be digested in the stomach are not broken down and instead are absorbed into the bloodstream. Often the body reacts to these “foreign proteins” by triggering the immune system, causing inflammation. It can even trigger auto-immune problems. Homogenized milk has also been linked to heart disease probably because of the fat globules that are dispersed by the process.

5. In addition to being chemically altered into something that hard to digest and causes problems, today’s milk usually contains steroids, antibiotics, pesticides from treated grains, bacteria from infected animals, and genetically engineered growth hormones.

So if you do drink milk, I suggest you look for pure raw milk from grass fed cows (which is hard to get in most states unfortunately), because it may not be the milk per se, but how milk is chemically altered that causes the problems.

Violets Don’t Just Smell Good

You know spring is here when you catch a whiff of Violets (Viola odorata). These beautiful flowers, which you may also know as Heartsease, are members of the Violaceae (Violet) Family.

In mythology Zeus had a lover named Ione (from which the word viola is derived). His wife, Hera was jealous and turned her into a white heifer. Zeus created violets to give her something lovely to graze upon. Wherever Venus and Adonis lay together a bed of violets was said to have sprung. Persephone, the daughter of the Earth Mother Demeter, was picking violets when Pluto kidnapped her to live with him in the underworld. Athens was once known as “the city of violets.”

The leaf and flower have been used for thousands of years by millions of people as an antifungal, anti-inflammatory, and antiseptic agent.

Violets have been used to improve acne, anger, asthma, bronchitis, colds, eczema, fever, fibrocystic breast disease, grief, headache, heartbreak, lymphatic congestion, mastitis, mumps, psoriasis, scurvy, sore throat, ulcers, urinary tract infection, varicose veins, and whooping cough. Apply a cloth soaked in violet leaf and/or flower tea to the back of the neck to treat headaches. The flowers are eaten as a breath freshener.

Violet flower essence helps those that feel lonely, despite being surrounded by others. It increases openness and helps shy aloof people that want to share but feel overwhelmed.

As long as the leaves are heart shaped, the leaves and buds are edible raw in salads or as a potherb. The flowers are edible and make a beautiful garnish. Freeze the flowers into water in ice cube trays for a touch of elegance. Violet sherbet, puddings, and candied violets are sweet delicacies. Violet tea is most often prepared from the leaves. Violet leaf tea is safe and gentle; it even can be used as a substitute for baby aspirin. Do not substitute African violets as a medicine plant.

Ancient Greeks wore crowns of violets to promote serenity and sleep. Ancient Romans would plant violets upon the graves of children. Violets are regarded as a symbol of innocence and modesty. Violet is the state flower of Illinois, New Jersey, Rhode Island and Wisconsin. Violet flowers are carried to bring good fortune.

Violet leaves and flowers contain beta-carotene, vitamin C, salicylates, the flavonoid rutin, mucilage, and the flowers contain essential oil.

Violets are pungent, bitter, and sweet, cool and moist and correspond to Venus, and the element of water.

Viola odorata is native to western Asia and Europe but is widely cultivated and naturalized. This evergreen perennial grows to about 6 inches in height and has heart-shaped leaves. The flowers are self-pollinating and purple, pink, lavender, or white in color. They usually have five petals, two on the upper portion, two laterals, and one on the bottom. Though flowers appear in early spring, the true seed-producing flower is inconspicuous and appears in autumn.

In gardening, violet leaves are used as a fertilizer for leaf crops. Some Native Peoples have soaked corn seeds in cool violet tea to prevent insect damage during germination.

In the garden, violet provides nectar for early butterflies. The plant prefers full to partial shade, soil that is rich in organic matter, and moderate to high amounts of water. There are over one hundred of the Viola genus. Most are perennial, though there are a few annuals in the genus. Viola. tricolor, also known as Pansy, also edible is one of the most recognized.

Violet Vinegar

Place as many violet flowers as possible into a jar. Cover with white wine vinegar, cork and allow to steep for one month, shaking daily. Strain and refrigerate. Voila!

Violet Honey

In the spring, collect two cups violet flowers. Place in the blender with one cup raw unfiltered honey and the juice of one lemon and blend. Store in a glass jar in the freezer. Use as a spread on sprouted crackers.

Coffee: To Quit Or Not Quit

Coffee is the hot beverage of choice in Europe, the Americas, and the Arabic world, with tea occupying that position in Britain, China, and India. In Arabia, the oily coffee berries were used as a medicine and fermented to make wine almost 2,000 years ago. There are many legends about how the stimulating properties of coffee came to be recognized. One legend traces coffee’s first use as a beverage back to an Arabian monastery, where sometime around the 10th century a monk noticed a small herd of goats cavorting all night after eating berries from the coffee plants that grew wild in the vicinity. The monks brewed a concoction of the berries in hot water and found it helped them stay awake for their nightly prayers.

The practice of roasting the beans originated in Syria in the 13th century. Coffee arrived in Paris in 1643, and by 1675 the city had more than 250 coffee houses. By the 18th century the coffee bush had reached Brazil, which now produces more coffee than the rest of the world combined. Since then, coffee has become the national drink in many countries. It has been estimated that 25 percent of all adults in the United States consume more than five cups of coffee every day. They drink four times more coffee than beer, three times more than soft drinks, and millions of gallons more than milk.

Is this healthy? Countless studies have been done, yet medical science has come up with little that would persuade people of the need to find an alternative to coffee. Some studies suggest a possible relationship between coffee and pancreatic diseases such as cancer, though this is actively debated. Others suggest a mild aggravating effect on hypertension and irregularities in heart rhythm. Many people who drink coffee recognize that it irritates their stomach, and studies have shown that its tannic acid content interferes with iron absorption and aggravates iron-deficiency anemia. The same is true of black tea. Medical research has also focused on the link between coffee consumption and PMS, fibrocystic breast disease, insomnia and other sleep disorders, and decreased rates of calcium absorption, although none of the findings are conclusive.

But the upshot is that the evidence is not compelling enough to spark a massive retreat from a beverage that has become an integral part of the daily routine in many households. The reasons people drink coffee are many and often firmly held. Besides finding pleasure in the aroma and flavor, many of us sip it as part of a comforting ritual, accompanied by a newspaper in the morning or a chat with a companion later in the day. Some also find that it acts as a morning laxative. But probably the most universal reason for drinking coffee is that it gets us going first thing in the morning and keeps us going later in the day when our energy begins to flag. It banishes sluggishness after a meal or in the evening hours at the end of a hard day.

Why Not Quit?
Even without the support of highly publicized, conclusive studies, experienced medical practitioners, especially those who take a holistic approach, know that there are many medical problems and symptoms that may be aggravated by caffeine and that a trial period of several weeks without the stuff might well be warranted to see if symptoms subside. Hypertension, irregularities in heart rhythm, sleep disorders, anxiety, panic attacks, irritable bowel syndrome, and migraine and tension headaches might abate if people reduced or even eliminated their coffee intake. Even people with chronic musculosketetal pain syndrome — in the form of head-aches, low back pain, joint pain, and so forth — paradoxically often find relief when they avoid caffeine, which is sometimes used in pain medications prescribed for those very symptoms.

Another reason for eliminating caffeine is that doing so will reduce our stress and toll it takes on our lives. We all know that adrenaline is one of the key hormones responsible for the body’s stress response. Caffeine is essentially an adrenaline equivalent — it acts in the body to block the enzyme responsible for deactivating adrenaline’s effects, thus accentuating and prolonging the action of circulating adrenaline. Avoiding coffee and other beverages that contain caffeine is a biochemical means of reducing your internal stress level.

For those interested in yoga, there is another reason to find substitutes for dietary stimulants — the challenge of tapping into the vast energies that lie within rather than depending on a drug. Overcoming periodic dips in energy through exercise, relaxation, postures, breathing practices, and meditation will revitalize and replenish the body. Caffeine only depletes the body further by masking the symptoms of fatigue and thereby sustaining a pace that the body and mind are protesting against. Lack of energy is a signal that rest and revitalization are needed, not a weakness to be overridden by chemical stimulants.

Coffee Withdrawal
If you decide to experiment with eliminating caffeine, you’ll quickly discover it’s addictive. Other than the morning fatigue, which can often be reduced with a shower and some vigorous exercise, and the sluggish bowels, which can often be stimulated by another hot drink (although not always as effectively), the main withdrawal symptom is a headache. This usually announces itself as a dull, heavy pain, but it can take the form of a severe tension headache or migraine, beginning 16 to 36 hours after the last cup (depending on the habitual level of consumption) and lasting two to three days.

For those who wish to persist in the cold-turkey approach to self-decaffeination, the homeopathic remedy nux vomica 30c taken nightly for three to seven days may help, especially if the first dose is taken the night before mounting your first assault on the habit. Ease Plus, an herbal remedy based on a traditional Chinese formula, invigorates the liver and digestive system while calming the nervous system — all of which may make the transition easier.

Patience also helps, and if worst comes to worst, so may an ounce or two of the offending brew itself. If an abrupt halt seems too radical, a gradual transition may be more palatable, although it will require persistence. Eliminate a cup from your daily quota, stay at that level until you are comfortable, and then eliminate another cup. You can also gradually make the brew less concentrated either by diluting it with water or milk or by substituting black tea. Another trick is to eliminate the sweetener before you begin to eliminate the coffee, especially if you’ve been using sugar. Caffeine and sugar seem to be a particularly habit-forming combination.

Dropping caffeine from your life is like changing any habit — the best approach is to make the smallest change possible that still gets the job done: keep the rituals, change only what’s in the cup. Decaf may help in the transition, although if you really want to pursue this, herbal tea, a roasted grain beverage, or hot water mixed with fresh lemon juice and honey are preferable.

PCTG News: Do You Drink Diet Soda?

OK, I am not going to rant. But I need to get this out of my system: I think diet soda is awful. I think all soda is awful, actually (yes, I know there are no “bad” foods, but I hold soda in approximately the same regard as those puffy orange Circus Peanuts — these are not really “foods,” per se). Diet soda, in my view, is especially insidious.

Here are my top 10 reasons:

1. There is absolutely no proof that diet soda helps people lose weight. The calorie-reduction argument is total bunk, and zero studies have shown a positive correlation between drinking diet soda and weight loss. On the contrary, there’s significant evidence that diet sodas and other noncaloric, artificially sweetened drinks actually lead — quite powerfully — to weight gain. (See “6 ‘Healthy’ Food Choices to Rethink” for more on that.

2. Diet sodas are billed as being good for type 2 diabetics and other blood-sugar- challenged types, but they aren’t. Because of something called the “cephalic phase response,” your body tastes the sweetness, and even though there are no calories to shuttle, the brain triggers a release of insulin from the pancreas and also a “Sugar is coming! Stop-burning fat” response from the liver. The result is the usual array of insulin-related problems (increased urge to eat, increased tendency toward fat storage, pro-inflammatory biochemical cascade), plus an arrest of healthy protein-and-starch production, and a confusion of the body’s built-in caloric monitoring systems, all of which compel you to plump up and eat even more unhealthy stuff later. 3. Diet sodas and the chemically derived artificial sweeteners they contain (especially aspartame) may act as neurotoxins and have been linked to headaches, memory problems, anxiety, brain fog, depression, skin irritations, menstrual problems, fibromyalgia, joint pain and more. (You can read up on the scientific debate about this both in the aforementioned “Poor Substitutes” and in our article “Excitotoxins.”)

4. The act of drinking diet soda — and of seeing it in your fridge — sends your psyche a slew of negative, demoralizing, less-than-healthy mental messages (I am afraid of getting fat; I don’t trust my body to crave the right things; I need to be on a diet; I am compelled to drink sweet stuff, even though I know it’s not good for me; I’m being “good” now so I can be “bad” later), all of which tend to drive other unhealthy eating behaviors even as they trigger disempowering feelings of self-denial and self-indulgence. 5. Artificial sweeteners and artificial colors tend to drive cravings for more sweet and hyper-flavored foods (more diet soda, please!) and reduce your ability to properly taste more subtle flavors or natural foods, perverting your palate and dissuading you from making other healthy changes to your diet because nothing natural tastes the way it ought to.

6. Diet soda contains all kinds of icky chemicals that add to your body’s toxic burden, lowering your immunity, contributing to inflammation and reducing your body’s ability to deal effectively with other, less easily avoided toxins like those pervasive in our food, water, body-care products and environment.

7. Frequent sipping or gulping of diet soda blunts your thirst, reducing your intake of pure water, which is a much better choice for hydration and helps to clear toxins from your system (vs. further polluting it). Regular imbibing of soda may also interfere with your body’s healthy hunger signals and thus dissuade you from eating healthy snacks that would support good nutrition, metabolism, energy and mental function throughout the day.

8. The acids in diet soda (and regular soda, for that matter) eat away at the enamel on your teeth. They also are acidifying to your entire system, and thus disruptive to your general health, including the good flora in your gut, where about 60 percent of your immune system resides.

9. Diet soda (like regular soda) is generally bottled or canned, and its aficionados tend to drink it by the case, multi-liter twin pack and so on — day in, day out, year after year after year. Habitually imbibing packaged drinks creates all kinds of nonbiodegradeable garbage, and every aspect of soda production (from manufacturing and packaging to transport — and even its recycling) is an unnecessarily wasteful use of fossil fuels. Drinking any soda is also incredibly expensive, an important point for anyone who protests that they can’t afford high-quality food or decent nutritional supplements.

10. Despite all its amalgamated cruddiness, diet sodas somehow get a pass in practically all weight-loss plans, and are actually promoted by many dietitians as “free” foods or “good” treats despite the fact that they are categorically lousy for people. They are aggressively advertised as being “better choices” for health- and weight-conscious people, and as a result, many kids and teenagers make them a habit early in life. Every time I see this pro-diet-soda dynamic in action, it just chaps my hide and makes me dislike the stuff even more.

OK, I wound up ranting a little. Sorry. I know that many people who adore diet soda and have been sold on its wonderfulness may take issue with my demonization of these beverages. To which I say: Let’s agree to disagree. If drinking it makes you happy enough, or is an occasional enough dalliance that none of the above matters, drink away!

And to those who find themselves addicted to diet soda, I can only say take heart: Thousands before you have broken the addiction and found themselves astonished by how much better they feel.

My recommendation: For a week, start each day with a big bottle full of pure water with a slice of cucumber or orange or lemon floating in it. Sip away, avoid the soda aisles and vending machines, and just see if you don’t start feeling better yourself.

10 Ways to Increase Your Daily Water Intake

If you’re anything like me, running around like a mad woman downing mindless cups of caffeine in all varieties, all day, well, then you probably aren’t getting enough water either. So, I’m doing the only logical thing and making a point to drink more of it every day! Here are some tips on jumping on the water train, straight to hydration station!

1. Know that the eight glass rule isn’t necessarily for everyone. Weight and exercise also factor into how much you should drink a day so figure out how much water you need a day with this nifty water-drinking calculator!

2. Don’t feel like you have to start drinking dozens of glasses of water right off the bat, ease into it!

3. When you want to drink a soda, think about the pros and cons. What good is a soda for you? It’s full of Aspartame, unnatural sweeteners, dyes… who knows! Water on the other hand is something your body needs and flourishes from.

4. Make water accessible! Buy yourself a water purifying system (Heck, you can nab yourself a Brita at the grocery store!) so that way there is never an excuse not to pour yourself a glass.

5. To piggyback on making it accessible, plan ahead! If you know you’re going to be out and about all day or sitting for forever at a desk, pour yourself a bottle to-go so you’re prepared when thirst strikes.

6. Drinking water all day can get a little boring, so spice it up! Add some fruit to your next glass! A personal favorite of mine is to add cucumber. It’s refreshing and different and keeps my taste buds from yawning while keeping my body happy.

8. Add some incentive to drinking water by keeping it cold- cold water takes energy for your body to regulate the temperature and burns calories!

9. If none of these strike your fancy, set a timer! Depending on how much water you need to intake, you can anticipate needing to drink a glass every other hour, for example.

10. Get sneaky by eating water enriched foods like watermelon or tomatoes- both over 90 percent made of water not to mention delicious and healthy for you!

Water is the essence of life, don’t forget to make it a part of yours!
